Description
Flaky, buttery croissants filled with almond cream and topped with sliced almonds
Ingredients
- 1 teaspoon salt
- 0.5 cup butter
- 1.5 cups flour
- 1 tablespoon almond extract
- 1 large egg
- 0.25 cup granulated sugar
- 2 teaspoons yeast
- 0.5 cup almond paste
- 0.5 cups milk
- 0.5 cup almonds
Instructions
- Step 1: In a small bowl, combine warm milk, sugar, and yeast. Stir to dissolve yeast, then let sit for 5 minutes.
- Step 2: In a large mixing bowl, combine flour, salt, and yeast mixture. Mix until a shaggy dough forms.
- Step 3: Add softened butter to the dough and mix until a cohesive dough forms.
- Step 4: Knead the dough for 10 minutes, until it becomes smooth and elastic.
- Step 5: Place the dough in a greased bowl, cover with plastic wrap, and let rise in a warm place for 1 hour, or until doubled in size.
- Step 6: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Step 7: On a lightly floured surface, roll out the dough to a thickness of 1/4 inch.
- Step 8: Spread the almond paste evenly over the center of the dough, leaving a 1-inch border on either side.
- Step 9: Fold the 1-inch borders over the almond paste, then roll the dough into a tight log.
- Step 10: Cut the log into 12 equal pieces. Place the pieces on the prepared baking sheet, leaving 1 inch of space between each croissant.
- Step 11: Brush the tops of the croissants with beaten egg and sprinkle with sliced almonds.
- Step 12: Bake for 15-20 minutes, or until golden brown.
