Description
Pan-seared rainbow trout fillet coated with a crunchy almond crust, served with a side of lemon butter sauce
Ingredients
- 2 cloves garlic
- 4 fillets rainbow trout
- parsley
- Salt and pepper
- 0.25 cup Parmesan cheese
- 0.5 cup panko breadcrumbs
- 1 cup almonds
- 2 tbsp olive oil
- 2 lemons
- 2 tbsp unsalted butter
Instructions
- Step 1: Preheat oven to 400°F (200°C).
- Step 2: In a food processor, grind almonds into a coarse crumb.
- Step 3: In a shallow dish, mix together ground almonds, panko breadcrumbs, and Parmesan cheese.
- Step 4: Season trout fillets with salt and pepper.
- Step 5: Dip each trout fillet into the almond mixture, pressing gently to adhere.
- Step 6: Heat olive oil in a large skillet over medium-high heat. Sear trout fillets for 2-3 minutes on each side, until golden brown.
- Step 7: Transfer skillet to the preheated oven and bake for 8-10 minutes, or until cooked through.
- Step 8: While trout is baking, mix lemon juice, softened butter, and garlic in a small bowl.
- Step 9: Remove trout from oven and brush with lemon butter sauce.
- Step 10: Garnish with chopped parsley and serve immediately.
