Description

Pan-seared rainbow trout fillet coated with a crunchy almond crust, served with a side of lemon butter sauce

Ingredients

  • 2 cloves garlic
  • 4 fillets rainbow trout
  • parsley
  • Salt and pepper
  • 0.25 cup Parmesan cheese
  • 0.5 cup panko breadcrumbs
  • 1 cup almonds
  • 2 tbsp olive oil
  • 2 lemons
  • 2 tbsp unsalted butter

Instructions

  1. Step 1: Preheat oven to 400°F (200°C).
  2. Step 2: In a food processor, grind almonds into a coarse crumb.
  3. Step 3: In a shallow dish, mix together ground almonds, panko breadcrumbs, and Parmesan cheese.
  4. Step 4: Season trout fillets with salt and pepper.
  5. Step 5: Dip each trout fillet into the almond mixture, pressing gently to adhere.
  6. Step 6: Heat olive oil in a large skillet over medium-high heat. Sear trout fillets for 2-3 minutes on each side, until golden brown.
