Andouille Sausage Jambalaya

Description
A classic Louisiana dish made with spicy Andouille sausage, rice, and vegetables.
Ingredients
- 1 large red bell pepper
- 2 cups long-grain rice
- 3 cloves garlic
- 2 tbsp vegetable oil
- 2 cups chicken broth
- 0.5 tsp cayenne pepper
- 1 tsp thyme
- 1 lb Andouille sausage
- Salt and pepper
- 1 tsp paprika
- 1 can diced tomatoes
- 1 large onion
- 3 stalks celery
Instructions
- Step 1: Heat oil in a large cast-iron pot over medium-high heat.
- Step 2: Add sausage and cook, stirring occasionally, until browned, about 5 minutes.
- Step 3: Add onion, celery, and garlic and cook, stirring occasionally, until vegetables are tender, about 5 minutes.
- Step 4: Add bell pepper and cook, stirring occasionally, until tender, about 3 minutes.
- Step 5: Add rice, diced tomatoes, broth, thyme, paprika, cayenne pepper, salt, and pepper.
- Step 6: Stir to combine, then bring to a boil.
- Step 7: Reduce heat to low, cover, and simmer, stirring occasionally, until rice is tender and liquid is absorbed, about 25 minutes.
- Step 8: Serve hot.
