Andouille Sausage Jambalaya

Description

A classic Louisiana dish made with spicy Andouille sausage, rice, and vegetables.

Ingredients

  • 1 large red bell pepper
  • 2 cups long-grain rice
  • 3 cloves garlic
  • 2 tbsp vegetable oil
  • 2 cups chicken broth
  • 0.5 tsp cayenne pepper
  • 1 tsp thyme
  • 1 lb Andouille sausage
  • Salt and pepper
  • 1 tsp paprika
  • 1 can diced tomatoes
  • 1 large onion
  • 3 stalks celery

Instructions

  1. Step 1: Heat oil in a large cast-iron pot over medium-high heat.
  2. Step 2: Add sausage and cook, stirring occasionally, until browned, about 5 minutes.
  3. Step 3: Add onion, celery, and garlic and cook, stirring occasionally, until vegetables are tender, about 5 minutes.
  4. Step 4: Add bell pepper and cook, stirring occasionally, until tender, about 3 minutes.
  5. Step 5: Add rice, diced tomatoes, broth, thyme, paprika, cayenne pepper, salt, and pepper.
  6. Step 6: Stir to combine, then bring to a boil.
  7. Step 7: Reduce heat to low, cover, and simmer, stirring occasionally, until rice is tender and liquid is absorbed, about 25 minutes.
  8. Step 8: Serve hot.
