Description
Thick-cut, smoked, and savory bacon with a hint of applewood flavor
Ingredients
- 2 tbsp smoked paprika
- 0.5 cup brown sugar
- 2 tbsp pink curing salt
- 2 lbs pork belly
- 2 tbsp black pepper
- 2 tbsp apple cider syrup
- 1 cup kosher salt
Instructions
- Step 1: Preheat smoker to 225°F (110°C)
- Step 2: In a small bowl, mix together kosher salt, brown sugar, pink curing salt, and black pepper
- Step 3: Rub the curing mixture all over the pork belly, making sure to coat evenly
- Step 4: Place the pork belly on a wire rack set over a rimmed baking sheet or a tray, and let cure in the refrigerator for 7 days
- Step 5: After 7 days, remove the pork belly from the cure and rinse off excess salt under cold running water
- Step 6: Pat the pork belly dry with paper towels and place it in the smoker
- Step 7: Smoke for 4 hours, or until the internal temperature reaches 150°F (65°C)
- Step 8: Remove the bacon from the smoker and let it cool to room temperature
- Step 9: Once cooled, slice the bacon into thick strips and serve
