Description

Ingredients

  • 2 tbsp smoked paprika
  • 0.5 cup brown sugar
  • 2 tbsp pink curing salt
  • 2 lbs pork belly
  • 2 tbsp black pepper
  • 2 tbsp apple cider syrup
  • 1 cup kosher salt

Instructions

  1. Step 1: Preheat smoker to 225°F (110°C)
  2. Step 2: In a small bowl, mix together kosher salt, brown sugar, pink curing salt, and black pepper
  3. Step 3: Rub the curing mixture all over the pork belly, making sure to coat evenly
  4. Step 4: Place the pork belly on a wire rack set over a rimmed baking sheet or a tray, and let cure in the refrigerator for 7 days
  5. Step 5: After 7 days, remove the pork belly from the cure and rinse off excess salt under cold running water
  6. Step 6: Pat the pork belly dry with paper towels and place it in the smoker
  7. Step 7: Smoke for 4 hours, or until the internal temperature reaches 150°F (65°C)
  8. Step 8: Remove the bacon from the smoker and let it cool to room temperature
  9. Step 9: Once cooled, slice the bacon into thick strips and serve
