Description
Flaky, buttery scones loaded with crispy bacon and sharp cheddar cheese
Ingredients
- 1 large egg
- 1 cup cheddar cheese
- 6 slices bacon
- 0.5 teaspoon baking powder
- 0.25 cup granulated sugar
- 0.5 teaspoon salt
- 0.5 cups flour
- 0.75 cup heavy cream
- 0.5 cup butter
Instructions
- Step 1: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Step 2: In a large bowl, whisk together flour, sugar, salt, and baking powder.
- Step 3: Add cold butter to the dry ingredients and use a pastry blender or your fingers to work the butter into the flour mixture until it resembles coarse crumbs.
- Step 4: In a separate bowl, whisk together heavy cream and egg until well combined.
- Step 5: Pour the cream mixture over the flour mixture and stir until the dough comes together in a shaggy mass.
- Step 6: Fold in crumbled bacon and shredded cheddar cheese.
- Step 7: Turn the dough out onto a floured surface and gently knead it a few times until it comes together.
- Step 8: Pat the dough into a circle that is about 1 inch (2.5 cm) thick.
- Step 9: Use a biscuit cutter or the rim of a glass to cut out scones. Gather the scraps, re-form the dough, and cut out additional scones.
- Step 10: Place the scones on the prepared baking sheet, leaving about 1 inch (2.5 cm) of space between each scone.
- Step 11: Brush the tops of the scones with a little extra heavy cream and sprinkle with additional cheddar cheese if desired.
- Step 12: Bake for 18-20 minutes, or until the scones are golden brown.
