A breakfast twist on the classic sub sandwich

Ingredients

  • 4 rolls sub
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 4 large eggs
  • 4 slices cheddar cheese
  • 6 slices bacon
  • 0.5 teaspoon black pepper

Instructions

  1. Step 1: Preheat a grill or grill pan to medium-high heat.
  2. Step 2: Cook the bacon slices for 4-5 minutes per side, until crispy. Drain on paper towels.
  3. Step 3: Butter the sub rolls.
  4. Step 4: Grill the sub rolls for 2-3 minutes, until lightly toasted.
  5. Step 5: In a bowl, whisk the eggs together and season with salt and pepper.
  6. Step 6: Heat a non-stick pan over medium heat and pour in the eggs. Scramble until cooked through.
  7. Step 7: Assemble the subs by spreading scrambled eggs on the bottom half of the roll, topping with 2 slices of cheese, 2 slices of bacon, and finishing with the top half of the roll.
