Description
A breakfast twist on the classic sub sandwich
Ingredients
- 4 rolls sub
- 2 tablespoons butter
- 1 teaspoon salt
- 4 large eggs
- 4 slices cheddar cheese
- 6 slices bacon
- 0.5 teaspoon black pepper
Instructions
- Step 1: Preheat a grill or grill pan to medium-high heat.
- Step 2: Cook the bacon slices for 4-5 minutes per side, until crispy. Drain on paper towels.
- Step 3: Butter the sub rolls.
- Step 4: Grill the sub rolls for 2-3 minutes, until lightly toasted.
- Step 5: In a bowl, whisk the eggs together and season with salt and pepper.
- Step 6: Heat a non-stick pan over medium heat and pour in the eggs. Scramble until cooked through.
- Step 7: Assemble the subs by spreading scrambled eggs on the bottom half of the roll, topping with 2 slices of cheese, 2 slices of bacon, and finishing with the top half of the roll.
