Ingredients

  • 2 tbsp olive oil
  • 1 cup beef broth
  • Salt and pepper
  • 2 cloves garlic
  • 1 cup red wine
  • 2 tsp thyme
  • 2 tbsp butter
  • 12 slices bacon
  • 4 6 oz filet mignon steaks

Instructions

  1. Step 1: Preheat oven to 400°F (200°C).
  2. Step 2: Wrap each filet mignon with 3 slices of bacon, securing with a toothpick if needed.
  3. Step 3: Heat olive oil in a large skillet over medium-high heat. Sear the bacon-wrapped filets for 2-3 minutes per side, or until browned.
  4. Step 4: Transfer the skillet to the preheated oven and cook for 12-15 minutes, or until the filets reach desired doneness.
  5. Step 5: While the filets cook, reduce the red wine and beef broth in a small saucepan over medium heat until almost syrupy.
  6. Step 6: Remove the filets from the oven and let rest for 5 minutes. Stir in butter, garlic, and thyme into the reduced wine sauce.
  7. Step 7: Serve the filets with the rich demiglace spooned over the top.
