Description
Pan-seared filet mignon wrapped in crispy bacon, served with a rich demiglace
Ingredients
- 2 tbsp olive oil
- 1 cup beef broth
- Salt and pepper
- 2 cloves garlic
- 1 cup red wine
- 2 tsp thyme
- 2 tbsp butter
- 12 slices bacon
- 4 6 oz filet mignon steaks
Instructions
- Step 1: Preheat oven to 400°F (200°C).
- Step 2: Wrap each filet mignon with 3 slices of bacon, securing with a toothpick if needed.
- Step 3: Heat olive oil in a large skillet over medium-high heat. Sear the bacon-wrapped filets for 2-3 minutes per side, or until browned.
- Step 4: Transfer the skillet to the preheated oven and cook for 12-15 minutes, or until the filets reach desired doneness.
- Step 5: While the filets cook, reduce the red wine and beef broth in a small saucepan over medium heat until almost syrupy.
- Step 6: Remove the filets from the oven and let rest for 5 minutes. Stir in butter, garlic, and thyme into the reduced wine sauce.
- Step 7: Serve the filets with the rich demiglace spooned over the top.
