Description

Crispy battered fish, topped with fresh slaw and chipotle tartar, all wrapped in a warm tortilla

Ingredients

  • 0.5 teaspoon paprika
  • Lime
  • 0.25 teaspoon cayenne pepper
  • 0.25 teaspoon black pepper
  • 8 corn tortillas
  • 0.5 teaspoon salt
  • Vegetable oil
  • 0.5 cup all-purpose flour
  • Chipotle Tartar Sauce
  • 1 cup buttermilk
  • cilantro
  • Red Cabbage Slaw
  • 1 pound cod fillets

Instructions

  1. Step 1: In a medium bowl, whisk together flour, paprika, cayenne pepper, salt, and black pepper.
  2. Step 2: Pour buttermilk into a separate medium bowl.
  3. Step 3: Dip each piece of fish into the buttermilk, then coat in the flour mixture, shaking off excess.
  4. Step 4: Heat about 1/2-inch of vegetable oil in a large skillet over medium-high heat until it reaches 350°F.
  5. Step 5: Fry the fish in batches until golden brown and cooked through, about 3-4 minutes per side.
  6. Step 6: Using a slotted spoon, remove the fish from the oil and place on a paper towel-lined plate to drain excess oil.
  7. Step 7: Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
  8. Step 8: Assemble the tacos by placing a piece of fish onto a tortilla, followed by a spoonful of Red Cabbage Slaw, a dollop of Chipotle Tartar Sauce, and a sprinkle of cilantro.
  9. Step 9: Serve immediately with lime wedges on the side.
