Ingredients
- Salt and pepper
- 2 tbsp olive oil
- 2 large sweet potatoes
- 2 large red bell peppers
- 2 large Brussels sprouts
- 1 large red onion
- 2 tsp thyme
- 0.25 cup balsamic vinegar
Instructions
- Step 1: Preheat the oven to 425°F (220°C).
- Step 2: In a large bowl, toss the sweet potatoes, red onion, Brussels sprouts, and red bell peppers with the olive oil, salt, and pepper until they are evenly coated.
- Step 3: Spread the vegetables in a single layer on a large baking sheet and roast for 25 minutes.
- Step 4: In a small saucepan, reduce the balsamic vinegar over medium heat until thick and syrupy, stirring occasionally (about 10 minutes).
