Description
Tender pulled pork in a sweet and tangy BBQ sauce, wrapped in a crispy flour tortilla
Ingredients
- 1 tablespoon onion powder
- 1 tablespoon garlic powder
- 0.25 cup brown sugar
- 0.25 cup cilantro
- 4 large flour tortillas
- 1 cup coleslaw
- 1 pound pork shoulder
- 0.25 cup BBQ rub
- 2 tablespoons smoked paprika
- 1 cup BBQ sauce
- 0.5 teaspoon black pepper
- 1 teaspoon salt
Instructions
- Step 1: Preheat oven to 300°F (150°C)
- Step 2: In a small bowl, mix together BBQ rub, brown sugar, smoked paprika, garlic powder, onion powder, salt, and black pepper
- Step 3: Rub the spice mixture all over the pork shoulder, making sure to coat evenly
- Step 4: Place the pork shoulder in a large Dutch oven or oven-safe pot
- Step 5: Bake for 6 hours, or until the pork is tender and easily shreds with a fork
- Step 6: After 6 hours, remove the pork from the oven and let it rest for 10 minutes
- Step 7: Using two forks, shred the pork into bite-sized pieces
- Step 8: Add the BBQ sauce to the shredded pork and toss to coat
- Step 9: Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds
- Step 10: Assemble the wraps by spooning the pulled pork onto a tortilla, followed by a spoonful of coleslaw and a sprinkle of cilantro
