Description
Thinly sliced raw beef served with arugula, shaved parmesan, and a lemon-truffle vinaigrette
Ingredients
- 1 pound filet mignon
- 4 cups arugula
- 0.25 cup olive oil
- 1 teaspoon Dijon mustard
- 2 tablespoons truffle oil
- 1 cup parmesan cheese
- 2 lemons
- Salt and pepper
Instructions
- Step 1: Wrap the filet mignon in plastic wrap and freeze for 30 minutes to firm up
- Step 2: Slice the filet into 1/8-inch thick slices and place on a plate or platter
- Step 3: In a small bowl, whisk together lemon juice, olive oil, truffle oil, and Dijon mustard
- Step 4: Season the vinaigrette with salt and pepper to taste
- Step 5: Top the sliced beef with arugula and shaved parmesan cheese
- Step 6: Drizzle the vinaigrette over the top of the salad and serve immediately
