Description

Thinly sliced raw beef served with arugula, shaved parmesan, and a lemon-truffle vinaigrette

Ingredients

  • 1 pound filet mignon
  • 4 cups arugula
  • 0.25 cup olive oil
  • 1 teaspoon Dijon mustard
  • 2 tablespoons truffle oil
  • 1 cup parmesan cheese
  • 2 lemons
  • Salt and pepper

Instructions

  1. Step 1: Wrap the filet mignon in plastic wrap and freeze for 30 minutes to firm up
  2. Step 2: Slice the filet into 1/8-inch thick slices and place on a plate or platter
  3. Step 3: In a small bowl, whisk together lemon juice, olive oil, truffle oil, and Dijon mustard
