Description
Crispy beer-battered cod served with golden fries and tangy malt vinegar aioli
Ingredients
- 0.25 tsp paprika
- 0.25 cup mayonnaise
- 0.25 cup malt vinegar
- 0.5 cup beer
- 2 lbs potatoes
- 2 cups vegetable oil
- 0.5 cup cornstarch
- 0.25 cup sugar
- 1 cup all-purpose flour
- 0.25 tsp black pepper
- 4 oz cod fillets
- 0.5 tsp salt
- 2 tbsp parsley
Instructions
- Step 1: In a large bowl, whisk together flour, cornstarch, and a pinch of salt.
- Step 2: Gradually add beer, whisking until smooth. Add sugar, pepper, and paprika.
- Step 3: Dip each cod fillet into the batter, coating completely.
- Step 4: Heat 1/2-inch of vegetable oil in a large skillet over medium-high. Fry battered cod for 3-4 minutes per side, until golden.
- Step 5: Drain cod on paper towels.
- Step 6: Heat remaining vegetable oil in a large pot to 350°F. Fry potato strips in batches until golden, about 3-4 minutes.
- Step 7: Drain fries on paper towels.
- Step 8: Mix malt vinegar and mayonnaise in a small bowl.
- Step 9: Serve cod with fries, aioli, and parsley.
