Description

Crispy beer-battered cod served with golden fries and tangy malt vinegar aioli

Ingredients

  • 0.25 tsp paprika
  • 0.25 cup mayonnaise
  • 0.25 cup malt vinegar
  • 0.5 cup beer
  • 2 lbs potatoes
  • 2 cups vegetable oil
  • 0.5 cup cornstarch
  • 0.25 cup sugar
  • 1 cup all-purpose flour
  • 0.25 tsp black pepper
  • 4 oz cod fillets
  • 0.5 tsp salt
  • 2 tbsp parsley

Instructions

  1. Step 1: In a large bowl, whisk together flour, cornstarch, and a pinch of salt.
  2. Step 2: Gradually add beer, whisking until smooth. Add sugar, pepper, and paprika.
  3. Step 3: Dip each cod fillet into the batter, coating completely.
  4. Step 4: Heat 1/2-inch of vegetable oil in a large skillet over medium-high. Fry battered cod for 3-4 minutes per side, until golden.
  5. Step 5: Drain cod on paper towels.
  6. Step 6: Heat remaining vegetable oil in a large pot to 350°F. Fry potato strips in batches until golden, about 3-4 minutes.
  7. Step 7: Drain fries on paper towels.
  8. Step 8: Mix malt vinegar and mayonnaise in a small bowl.
  9. Step 9: Serve cod with fries, aioli, and parsley.
