Ingredients
- 0.5 cup yellow onion
- 2 cloves garlic
- 1 teaspoon cumin
- 0.5 teaspoon salt
- 1 cup black beans
- 0.25 cup oats
- 0.25 cup cheddar cheese
- 0.5 cup red bell pepper
- 2 tablespoons cilantro
- 0.25 teaspoon black pepper
- 0.5 cup quinoa
- 1 teaspoon smoked paprika
- 1 tablespoon olive oil
Instructions
- Step 1: Preheat oven to 375°F (190°C).
- Step 2: In a medium bowl, mash black beans using a fork or a potato masher.
- Step 3: In a large bowl, combine mashed black beans, cooked quinoa, chopped red bell pepper, chopped yellow onion, minced garlic, olive oil, cumin, smoked paprika, salt, and black pepper. Mix well.
- Step 4: Stir in oats and grated cheese until well combined.
