Ingredients

  • 0.5 cup yellow onion
  • 2 cloves garlic
  • 1 teaspoon cumin
  • 0.5 teaspoon salt
  • 1 cup black beans
  • 0.25 cup oats
  • 0.25 cup cheddar cheese
  • 0.5 cup red bell pepper
  • 2 tablespoons cilantro
  • 0.25 teaspoon black pepper
  • 0.5 cup quinoa
  • 1 teaspoon smoked paprika
  • 1 tablespoon olive oil

Instructions

  1. Step 1: Preheat oven to 375°F (190°C).
  2. Step 2: In a medium bowl, mash black beans using a fork or a potato masher.
  3. Step 3: In a large bowl, combine mashed black beans, cooked quinoa, chopped red bell pepper, chopped yellow onion, minced garlic, olive oil, cumin, smoked paprika, salt, and black pepper. Mix well.
