Description
Sweet and smoky beans in a rich bourbon-infused tomato sauce
Ingredients
- 2 medium onions
- 1 cup ketchup
- 1 teaspoon ground cumin
- 2 tablespoons apple cider vinegar
- 1 pound navy beans
- 1 cup beef broth
- 2 tablespoons brown sugar
- 3 cloves garlic
- 2 tablespoons bourbon whiskey
- 1 pound smoked bacon
- Salt and pepper
- 1 teaspoon ground mustard
Instructions
- Step 1: Preheat oven to 250°F (120°C).
- Step 2: In a large Dutch oven, cook the bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside.
- Step 3: Add the chopped onions to the pot and cook until they are softened and lightly browned, about 8 minutes.
- Step 4: Add the garlic and cook for 1 minute.
- Step 5: Add the soaked and drained navy beans, ketchup, beef broth, brown sugar, apple cider vinegar, bourbon whiskey, mustard, cumin, salt, and pepper. Stir to combine.
- Step 6: Add the cooked bacon back into the pot and stir to combine.
- Step 7: Cover the pot with a lid and transfer to the preheated oven.
- Step 8: Bake for 6 hours, or until the beans are tender and the liquid has thickened into a rich sauce.
