Description

Sweet and smoky beans in a rich bourbon-infused tomato sauce

Ingredients

  • 2 medium onions
  • 1 cup ketchup
  • 1 teaspoon ground cumin
  • 2 tablespoons apple cider vinegar
  • 1 pound navy beans
  • 1 cup beef broth
  • 2 tablespoons brown sugar
  • 3 cloves garlic
  • 2 tablespoons bourbon whiskey
  • 1 pound smoked bacon
  • Salt and pepper
  • 1 teaspoon ground mustard

Instructions

  1. Step 1: Preheat oven to 250°F (120°C).
  2. Step 2: In a large Dutch oven, cook the bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside.
  3. Step 3: Add the chopped onions to the pot and cook until they are softened and lightly browned, about 8 minutes.
  4. Step 4: Add the garlic and cook for 1 minute.
  5. Step 5: Add the soaked and drained navy beans, ketchup, beef broth, brown sugar, apple cider vinegar, bourbon whiskey, mustard, cumin, salt, and pepper. Stir to combine.
  6. Step 6: Add the cooked bacon back into the pot and stir to combine.
  7. Step 7: Cover the pot with a lid and transfer to the preheated oven.
  8. Step 8: Bake for 6 hours, or until the beans are tender and the liquid has thickened into a rich sauce.
