Ingredients

  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon thyme
  • 1 pound beef brisket
  • 1 cup beef broth
  • 1 cup red wine
  • 1 onion
  • 1 bay leaf
  • 0.5 teaspoon black pepper
  • 1 tablespoon tomato paste
  • 3 cloves garlic
  • 1 teaspoon rosemary

Instructions

  1. Step 1: Preheat oven to 300°F (150°C).
  2. Step 2: Season the beef brisket with salt and pepper
  3. Step 3: Heat the olive oil in a large Dutch oven over medium-high heat. Sear the beef brisket until browned on both sides, about 2-3 minutes per side. Remove the brisket from the pot and set aside
  4. Step 4: Add the sliced onions to the pot and cook, stirring occasionally, until they are caramelized and golden brown, about 20-25 minutes
  5. Step 5: Add the garlic, beef broth, red wine, tomato paste, thyme, rosemary, and bay leaf to the pot. Stir to combine
  6. Step 6: Return the beef brisket to the pot, cover, and transfer to the preheated oven. Braise for 3-4 hours, or until the brisket is tender and easily shreds with a fork
  7. Step 7: Remove the pot from the oven and let the brisket rest for 10-15 minutes before slicing and serving
