Ingredients
- 4 large eggs
- 6 slices bacon
- Salt and pepper
- 4 large baking potatoes
- 2 tablespoons unsalted butter
- 1 cup cheddar cheese
- 0.25 cup chives
- 0.5 cup Monterey Jack cheese
Instructions
- Step 1: Preheat oven to 400°F (200°C)
- Step 2: Scrub the potatoes clean and poke some holes in them with a fork
- Step 3: Rub the potatoes with butter and season with salt and pepper
- Step 4: Bake the potatoes for 45-60 minutes, or until tender
- Step 5: While the potatoes are baking, cook the bacon in a pan until crispy
