Ingredients

  • 2 tsp basil
  • 0.5 tsp black pepper
  • 4 slices bread
  • 4 large eggs
  • 8 oz mozzarella cheese
  • 1 tsp salt
  • 0.25 cup olive oil
  • 1 pint cherry tomatoes
  • 2 tbsp balsamic vinegar

Instructions

  1. Step 1: Preheat oven to 400°F (200°C).
  2. Step 2: Slice the bread into 1-inch thick slices and toast until lightly browned.
  3. Step 3: In a medium bowl, whisk together eggs, salt, and pepper. Scramble the eggs in a non-stick skillet over medium heat.
  4. Step 4: In a separate bowl, whisk together olive oil, balsamic vinegar, and dried basil.
  5. Step 5: In a large bowl, combine the halved cherry tomatoes and the olive oil mixture. Toss to coat.
