A twist on the classic Italian appetizer, featuring scrambled eggs, cherry tomatoes, and mozzarella cheese on toasted bread
Ingredients
- 2 tsp basil
- 0.5 tsp black pepper
- 4 slices bread
- 4 large eggs
- 8 oz mozzarella cheese
- 1 tsp salt
- 0.25 cup olive oil
- 1 pint cherry tomatoes
- 2 tbsp balsamic vinegar
Instructions
- Step 1: Preheat oven to 400°F (200°C).
- Step 2: Slice the bread into 1-inch thick slices and toast until lightly browned.
- Step 3: In a medium bowl, whisk together eggs, salt, and pepper. Scramble the eggs in a non-stick skillet over medium heat.
- Step 4: In a separate bowl, whisk together olive oil, balsamic vinegar, and dried basil.
- Step 5: In a large bowl, combine the halved cherry tomatoes and the olive oil mixture. Toss to coat.
- Step 6: To assemble the bruschetta, place a slice of toasted bread on a plate, top with a slice of mozzarella cheese, a spoonful of scrambled eggs, and a spoonful of the cherry tomato mixture.
- Step 7: Drizzle with additional olive oil if desired.
