Description

Ingredients
- 0.25 cup cilantro
- 6 large flour tortillas
- Salt and pepper
- 2 tablespoons olive oil
- 0.5 cup black beans
- 1 cup Monterey Jack cheese
- 0.5 cup red bell pepper
- 6 large eggs
- 0.5 pound Mexican chorizo
- 1 jalapeño pepper
Instructions
- Step 1: Heat the olive oil in a large skillet over medium-high heat.
- Step 2: Add the chorizo and cook, breaking up with a spoon, until browned, about 5 minutes.
- Step 3: Add the diced red bell pepper and cook until tender, about 3 minutes.
- Step 4: Add the black beans and cook for 1 minute.
- Step 5: In a large bowl, whisk together the eggs and a pinch of salt.
- Step 6: Pour the eggs over the chorizo mixture and scramble until the eggs are cooked through.
- Step 7: Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
