Ingredients

  • 0.25 cup cilantro
  • 6 large flour tortillas
  • Salt and pepper

  • 0.5 cup black beans
  • 1 cup Monterey Jack cheese
  • 0.5 cup red bell pepper
  • 6 large eggs
  • 0.5 pound Mexican chorizo
  • 1 jalapeño pepper

Instructions

  1. Step 1: Heat the olive oil in a large skillet over medium-high heat.
  2. Step 2: Add the chorizo and cook, breaking up with a spoon, until browned, about 5 minutes.
  3. Step 3: Add the diced red bell pepper and cook until tender, about 3 minutes.
  4. Step 4: Add the black beans and cook for 1 minute.
