Description

A hearty breakfast burrito filled with scrambled eggs, chorizo, and cheddar cheese

Ingredients

  • 1 can diced green chilies
  • Salt and pepper
  • 1 medium onion
  • 2 cloves garlic
  • 8 large flour tortillas
  • 8 large eggs
  • 1 cup cheddar cheese
  • 2 tablespoons vegetable oil
  • 1 pound Mexican chorizo
  • 1 cup hash browns

Instructions

  1. Step 1: In a large bowl, whisk together eggs and a pinch of salt. Set aside.
  2. Step 2: In a large skillet, heat 1 tablespoon of oil over medium-high heat. Add chorizo and cook, breaking up with a spoon, until browned, about 5 minutes.
  3. Step 3: Add onion and garlic to the skillet and cook until onion is translucent, about 3 minutes.
  4. Step 4: Add hash browns to the skillet and cook until golden brown, about 5 minutes.
  5. Step 5: Add diced green chilies to the skillet and stir to combine.
  6. Step 6: Pour whisked eggs over the chorizo mixture in the skillet. Scramble eggs until cooked through, about 3-4 minutes.
  7. Step 7: Warm tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
  8. Step 8: Assemble burritos by spooning scrambled egg mixture onto a tortilla, followed by a sprinkle of cheese. Fold bottom half of tortilla up over filling, then fold in sides and roll up burrito to form a tight cylinder. Repeat with remaining ingredients.
