Description
A spicy breakfast burrito filled with chorizo, scrambled eggs, and cheese
Ingredients
- 8 large flour tortillas
- Salt and pepper
- 1 large onion
- 2 cloves garlic
- 0.25 cup cilantro
- 1 can diced green chilies
- 8 large eggs
- 1 cup Monterey Jack cheese
- 1 pound Mexican chorizo
Instructions
- Step 1: Cook the chorizo in a large skillet over medium-high heat, breaking it up with a spoon, until no longer pink, about 5 minutes.
- Step 2: Add the diced onion to the skillet and cook until translucent, about 3 minutes.
- Step 3: Add the garlic to the skillet and cook for 1 minute.
- Step 4: In a large bowl, whisk together the eggs and a pinch of salt. Pour the eggs over the chorizo mixture in the skillet and scramble until cooked through.
- Step 5: Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
- Step 6: Assemble the burritos by spooning the egg mixture onto a tortilla, followed by cheese, diced green chilies, and a sprinkle of cilantro.
- Step 7: Fold the bottom half of the tortilla up over the filling, then fold in the sides and roll the burrito up tightly.
