Ingredients

  • 8 large flour tortillas
  • Salt and pepper
  • 1 large onion
  • 2 cloves garlic
  • 0.25 cup cilantro
  • 1 can diced green chilies
  • 8 large eggs
  • 1 cup Monterey Jack cheese
  • 1 pound Mexican chorizo

Instructions

  1. Step 1: Cook the chorizo in a large skillet over medium-high heat, breaking it up with a spoon, until no longer pink, about 5 minutes.
  2. Step 2: Add the diced onion to the skillet and cook until translucent, about 3 minutes.
  3. Step 3: Add the garlic to the skillet and cook for 1 minute.
  4. Step 4: In a large bowl, whisk together the eggs and a pinch of salt. Pour the eggs over the chorizo mixture in the skillet and scramble until cooked through.
  5. Step 5: Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
  6. Step 6: Assemble the burritos by spooning the egg mixture onto a tortilla, followed by cheese, diced green chilies, and a sprinkle of cilantro.
  7. Step 7: Fold the bottom half of the tortilla up over the filling, then fold in the sides and roll the burrito up tightly.
