Description

Ingredients
- Salt and pepper
- 2 cloves garlic
- 0.5 cup onion
- 6 large eggs
- 1 cup cheddar cheese
- 0.5 cup bell pepper
- 6 large flour tortillas
- 0.5 cup chorizo sausage
- 1 can diced green chilies
Instructions
- Step 1: In a large bowl, whisk together eggs and a pinch of salt. Set aside.
- Step 2: In a large skillet, cook chorizo over medium-high heat, breaking it up with a spoon as it cooks, until browned, about 5 minutes.
- Step 3: Add onion, bell pepper, and garlic to the skillet and cook until the vegetables are tender, about 5 minutes.
- Step 4: Pour whisked eggs over the chorizo mixture and scramble until eggs are cooked through.
- Step 5: Warm tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
- Step 6: Assemble burritos by spooning scrambled egg mixture onto a tortilla, followed by cheese, diced green chilies, and a sprinkle of salt and pepper.
- Step 7: Fold bottom edge of tortilla up over filling, then fold in sides and roll burrito up tightly.
