Ingredients

  • Salt and pepper
  • 2 cloves garlic
  • 0.5 cup onion
  • 6 large eggs
  • 1 cup cheddar cheese
  • 0.5 cup bell pepper
  • 6 large flour tortillas
  • 0.5 cup chorizo sausage
  • 1 can diced green chilies

Instructions

  1. Step 1: In a large bowl, whisk together eggs and a pinch of salt. Set aside.
  2. Step 2: In a large skillet, cook chorizo over medium-high heat, breaking it up with a spoon as it cooks, until browned, about 5 minutes.
  3. Step 3: Add onion, bell pepper, and garlic to the skillet and cook until the vegetables are tender, about 5 minutes.
  4. Step 4: Pour whisked eggs over the chorizo mixture and scramble until eggs are cooked through.
  5. Step 5: Warm tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
