Breakfast Egg Rolls

Description

A twist on traditional egg rolls, filled with scrambled eggs, sausage, and cheese, perfect for a breakfast treat

Ingredients

  • 1 pound sweet sausage
  • 1 tablespoon olive oil
  • 1 large onion
  • 1 package egg roll wrappers
  • Salt and pepper
  • 6 large eggs
  • 0.5 cup Monterey Jack cheese
  • 2 cloves garlic
  • 1 cup cheddar cheese

Instructions

  1. Step 1: Preheat oil in a deep frying pan to 350°F
  2. Step 2: In a large skillet, cook sausage over medium-high heat, breaking it up with a spoon as it cooks, until no longer pink, about 5-7 minutes
  3. Step 3: Add chopped onion and minced garlic to the skillet and cook until onion is translucent
  4. Step 4: In a large bowl, whisk together eggs and a pinch of salt, then add shredded cheese and mix well
  5. Step 5: Add cooked sausage mixture to the bowl and stir until combined
  6. Step 6: Lay an egg roll wrapper on a flat surface, place about 1/2 cup of egg mixture in the center of the wrapper
  7. Step 7: Brush edges with a little water, then fold the bottom half up, fold in sides and roll up to form a tight cylinder, repeat with remaining wrappers and filling
  8. Step 8: When oil is hot, add a few egg rolls to the pan (do not overcrowd) and fry until golden brown, about 3-4 minutes on each side
  9. Step 9: Remove egg rolls from oil and place on paper towels to drain excess oil
