Breakfast Egg Rolls

Description
A twist on traditional egg rolls, filled with scrambled eggs, sausage, and cheese, perfect for a breakfast treat
Ingredients
- 1 pound sweet sausage
- 1 tablespoon olive oil
- 1 large onion
- 1 package egg roll wrappers
- Salt and pepper
- 6 large eggs
- 0.5 cup Monterey Jack cheese
- 2 cloves garlic
- 1 cup cheddar cheese
Instructions
- Step 1: Preheat oil in a deep frying pan to 350°F
- Step 2: In a large skillet, cook sausage over medium-high heat, breaking it up with a spoon as it cooks, until no longer pink, about 5-7 minutes
- Step 3: Add chopped onion and minced garlic to the skillet and cook until onion is translucent
- Step 4: In a large bowl, whisk together eggs and a pinch of salt, then add shredded cheese and mix well
- Step 5: Add cooked sausage mixture to the bowl and stir until combined
- Step 6: Lay an egg roll wrapper on a flat surface, place about 1/2 cup of egg mixture in the center of the wrapper
- Step 7: Brush edges with a little water, then fold the bottom half up, fold in sides and roll up to form a tight cylinder, repeat with remaining wrappers and filling
- Step 8: When oil is hot, add a few egg rolls to the pan (do not overcrowd) and fry until golden brown, about 3-4 minutes on each side
- Step 9: Remove egg rolls from oil and place on paper towels to drain excess oil
