Description

A layered breakfast dish featuring scrambled eggs, sausage, and cheese

Ingredients

  • 1 cup mozzarella cheese
  • 2 cups mixed bell peppers
  • 1 cup cheddar cheese
  • 1 pound sweet Italian sausage
  • parsley
  • 3 cloves garlic
  • 8 lasagna noodles
  • 1 cup bechamel sauce
  • 6 large eggs
  • Salt and pepper
  • 1 cup Parmesan cheese
  • 1 medium onion

Instructions

  1. Step 1: Preheat oven to 375°F (190°C).
  2. Step 2: Cook lasagna noodles according to package instructions. Drain and set aside.
  3. Step 3: In a large skillet, cook sausage over medium-high heat, breaking up with a spoon, until no longer pink, about 5-7 minutes.
  4. Step 4: Add onion and garlic to the skillet and cook until the onion is translucent, about 3-4 minutes.
  5. Step 5: Add bell peppers to the skillet and cook until tender, about 5 minutes.
  6. Step 6: In a large bowl, whisk together eggs and a pinch of salt. Set aside.
  7. Step 7: In a large saucepan, make bechamel sauce by melting 2 tablespoons of butter over medium heat. Whisk in 2 tablespoons of all-purpose flour and cook for 1 minute. Slowly pour in 1 cup of milk, whisking constantly. Bring to a simmer and cook until thickened, about 5 minutes. Season with salt and pepper to taste.
  8. Step 8: Spread a layer of bechamel sauce in the bottom of a 9x13-inch baking dish. Arrange 4 lasagna noodles on top.
  9. Step 9: Spread half of the egg mixture over the noodles, followed by half of the sausage mixture, and half of the cheese mixture (mozzarella, cheddar, and Parmesan).
  10. Step 10: Repeat the layers, starting with the noodles, then the bechamel sauce, the remaining egg mixture, the remaining sausage mixture, and finally the remaining cheese mixture.
  11. Step 11: Cover the baking dish with aluminum foil and bake for 30 minutes.
  12. Step 12: Remove the foil and continue baking for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  13. Step 13: Let the lasagna rest for 10-15 minutes before slicing and serving. Garnish with chopped parsley.
