Description
A layered breakfast dish featuring scrambled eggs, sausage, and cheese
Ingredients
- 1 cup mozzarella cheese
- 2 cups mixed bell peppers
- 1 cup cheddar cheese
- 1 pound sweet Italian sausage
- parsley
- 3 cloves garlic
- 8 lasagna noodles
- 1 cup bechamel sauce
- 6 large eggs
- Salt and pepper
- 1 cup Parmesan cheese
- 1 medium onion
Instructions
- Step 1: Preheat oven to 375°F (190°C).
- Step 2: Cook lasagna noodles according to package instructions. Drain and set aside.
- Step 3: In a large skillet, cook sausage over medium-high heat, breaking up with a spoon, until no longer pink, about 5-7 minutes.
- Step 4: Add onion and garlic to the skillet and cook until the onion is translucent, about 3-4 minutes.
- Step 5: Add bell peppers to the skillet and cook until tender, about 5 minutes.
- Step 6: In a large bowl, whisk together eggs and a pinch of salt. Set aside.
- Step 7: In a large saucepan, make bechamel sauce by melting 2 tablespoons of butter over medium heat. Whisk in 2 tablespoons of all-purpose flour and cook for 1 minute. Slowly pour in 1 cup of milk, whisking constantly. Bring to a simmer and cook until thickened, about 5 minutes. Season with salt and pepper to taste.
- Step 8: Spread a layer of bechamel sauce in the bottom of a 9x13-inch baking dish. Arrange 4 lasagna noodles on top.
- Step 9: Spread half of the egg mixture over the noodles, followed by half of the sausage mixture, and half of the cheese mixture (mozzarella, cheddar, and Parmesan).
- Step 10: Repeat the layers, starting with the noodles, then the bechamel sauce, the remaining egg mixture, the remaining sausage mixture, and finally the remaining cheese mixture.
- Step 11: Cover the baking dish with aluminum foil and bake for 30 minutes.
- Step 12: Remove the foil and continue baking for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- Step 13: Let the lasagna rest for 10-15 minutes before slicing and serving. Garnish with chopped parsley.
