Description
A twist on traditional nachos, perfect for breakfast or brunch
Ingredients
- 1 cup cheddar cheese
- 2 cloves garlic
- 8 chips corn tortilla
- Salt and pepper
- Salsa and sour cream
- 0.25 cup yellow onion
- 2 tablespoons olive oil
- 1 can refried beans
- 0.25 cup red bell pepper
- 2 large eggs
- 1 pound sausage
- 0.5 cup Monterey Jack cheese
Instructions
- Step 1: Preheat oven to 350°F (180°C)
- Step 2: Arrange tortilla chips in a single layer on a baking sheet
- Step 3: In a large skillet, cook sausage over medium-high heat, breaking it up with a spoon as it cooks, until browned, about 5-7 minutes
- Step 4: Transfer cooked sausage to a bowl and set aside
- Step 5: In the same skillet, add olive oil, diced red bell pepper, and diced yellow onion. Cook until vegetables are softened, about 3-4 minutes
- Step 6: Add garlic to the skillet and cook for an additional minute
- Step 7: Stir in refried beans and cook until heated through
- Step 8: In a separate bowl, whisk together eggs and a pinch of salt. Scramble eggs in a non-stick skillet until cooked through
- Step 9: Spread refried bean mixture over tortilla chips, followed by scrambled eggs, cooked sausage, and shredded cheese
- Step 10: Bake in preheated oven for 10-12 minutes, or until cheese is melted and bubbly
