Description

A twist on traditional nachos, perfect for breakfast or brunch

Ingredients

  • 1 cup cheddar cheese
  • 2 cloves garlic
  • 8 chips corn tortilla
  • Salt and pepper
  • Salsa and sour cream
  • 0.25 cup yellow onion
  • 2 tablespoons olive oil
  • 1 can refried beans
  • 0.25 cup red bell pepper
  • 2 large eggs
  • 1 pound sausage
  • 0.5 cup Monterey Jack cheese

Instructions

  1. Step 1: Preheat oven to 350°F (180°C)
  2. Step 2: Arrange tortilla chips in a single layer on a baking sheet
  3. Step 3: In a large skillet, cook sausage over medium-high heat, breaking it up with a spoon as it cooks, until browned, about 5-7 minutes
  4. Step 4: Transfer cooked sausage to a bowl and set aside
  5. Step 5: In the same skillet, add olive oil, diced red bell pepper, and diced yellow onion. Cook until vegetables are softened, about 3-4 minutes
  6. Step 6: Add garlic to the skillet and cook for an additional minute
  7. Step 7: Stir in refried beans and cook until heated through
  8. Step 8: In a separate bowl, whisk together eggs and a pinch of salt. Scramble eggs in a non-stick skillet until cooked through
  9. Step 9: Spread refried bean mixture over tortilla chips, followed by scrambled eggs, cooked sausage, and shredded cheese
  10. Step 10: Bake in preheated oven for 10-12 minutes, or until cheese is melted and bubbly
