Description
Crispy potato skins filled with scrambled eggs, cheddar cheese, and crispy bacon
Ingredients
- 0.25 teaspoon black pepper
- 0.5 cup milk
- 1 cup cheddar cheese
- 6 slices bacon
- 2 tablespoons butter
- 0.5 teaspoon salt
- 2 eggs
- 4 large baking potatoes
Instructions
- Step 1: Preheat oven to 400°F (200°C)
- Step 2: Scrub the potatoes clean and poke some holes in each with a fork
- Step 3: Rub the potatoes with melted butter and bake for 45-60 minutes, or until tender
- Step 4: While the potatoes are baking, cook the diced bacon in a pan over medium heat until crispy
- Step 5: In a separate bowl, whisk together the eggs, milk, salt, and pepper
- Step 6: Remove the potatoes from the oven and let them cool for a few minutes
- Step 7: Scoop out most of the potato flesh, leaving a thin layer to hold the skin together
- Step 8: Fill each potato skin with scrambled eggs, shredded cheese, and crispy bacon
- Step 9: Place the stuffed potato skins on a baking sheet and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly
