Description

A delicious breakfast twist on the classic quesadilla, filled with scrambled eggs, chorizo, and cheese.

Ingredients

  • 1 pound Mexican chorizo
  • 1 cup Monterey Jack cheese
  • 2 cloves garlic
  • 8 large flour tortillas
  • 1 medium onion
  • 8 large eggs
  • 2 tablespoons vegetable oil
  • 0.5 cup cheddar cheese
  • Salt and pepper

Instructions

  1. Step 1: In a large bowl, whisk together eggs and a pinch of salt. Set aside.
  2. Step 2: In a large skillet, heat 1 tablespoon of oil over medium-high heat. Add chorizo and cook, breaking up with a spoon, until browned, about 5 minutes.
  3. Step 3: Add onion and garlic to the skillet and cook until onion is translucent, about 3 minutes.
  4. Step 4: Pour whisked eggs over chorizo mixture and scramble until eggs are cooked through.
  5. Step 5: In a large bowl, combine cooked egg mixture, Monterey Jack cheese, and cheddar cheese.
  6. Step 6: Heat a large skillet or griddle over medium heat.
  7. Step 7: Place a tortilla in the skillet and sprinkle a quarter of the egg mixture onto half of the tortilla.
  8. Step 8: Fold tortilla in half to enclose filling. Cook for 2-3 minutes or until tortilla is crispy and cheese is melted.
  9. Step 9: Flip quesadilla and cook for an additional 2-3 minutes or until crispy and golden.
  10. Step 10: Repeat with remaining ingredients.
