Description
A delicious breakfast twist on the classic quesadilla, filled with scrambled eggs, chorizo, and cheese.
Ingredients
- 1 pound Mexican chorizo
- 1 cup Monterey Jack cheese
- 2 cloves garlic
- 8 large flour tortillas
- 1 medium onion
- 8 large eggs
- 2 tablespoons vegetable oil
- 0.5 cup cheddar cheese
- Salt and pepper
Instructions
- Step 1: In a large bowl, whisk together eggs and a pinch of salt. Set aside.
- Step 2: In a large skillet, heat 1 tablespoon of oil over medium-high heat. Add chorizo and cook, breaking up with a spoon, until browned, about 5 minutes.
- Step 3: Add onion and garlic to the skillet and cook until onion is translucent, about 3 minutes.
- Step 4: Pour whisked eggs over chorizo mixture and scramble until eggs are cooked through.
- Step 5: In a large bowl, combine cooked egg mixture, Monterey Jack cheese, and cheddar cheese.
- Step 6: Heat a large skillet or griddle over medium heat.
- Step 7: Place a tortilla in the skillet and sprinkle a quarter of the egg mixture onto half of the tortilla.
- Step 8: Fold tortilla in half to enclose filling. Cook for 2-3 minutes or until tortilla is crispy and cheese is melted.
- Step 9: Flip quesadilla and cook for an additional 2-3 minutes or until crispy and golden.
- Step 10: Repeat with remaining ingredients.
