Description

Ingredients
- 1 tbsp lemon juice
- 1 cup cherry tomatoes
- 4 large eggs
- 0.25 cup parsley
- Salt and pepper
- 6 slices bacon
- 1 cup mixed greens
- 0.5 cup feta cheese
- 1 cup cucumber
- 2 tbsp olive oil
Instructions
- Step 1: Preheat the oven to 400°F (200°C).
- Step 2: Line a baking sheet with parchment paper and lay the bacon slices on it. Bake for 15-20 minutes or until crispy.
- Step 3: In a bowl, whisk the eggs and season with salt and pepper. Scramble the eggs in a non-stick pan over medium heat.
- Step 4: In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, and feta cheese.
- Step 5: In a small bowl, whisk the olive oil and lemon juice. Pour the dressing over the salad and toss to combine.
