Description
A twist on traditional spring rolls, filled with scrambled eggs, sausage, and cheese, perfect for a breakfast on-the-go.
Ingredients
- 1 tablespoon olive oil
- Salt and pepper
- 1 pound Italian sausage
- 1 package spring roll wrappers
- 1 medium onion
- 4 large eggs
- 1 cup cheddar cheese
- 0.5 cup mozzarella cheese
- 2 cloves garlic
Instructions
- Step 1: In a large skillet, heat the olive oil over medium-high heat. Add the chopped onion and cook until translucent, about 3-4 minutes.
- Step 2: Add the garlic and cook for an additional minute.
- Step 3: Add the Italian sausage to the skillet, breaking it up with a spoon as it cooks, until no longer pink, about 5-6 minutes.
- Step 4: In a large bowl, whisk together the eggs and a pinch of salt. Pour the eggs over the cooked sausage mixture in the skillet and scramble until the eggs are cooked through.
- Step 5: In a separate bowl, combine the cheddar and mozzarella cheese.
- Step 6: To assemble the spring rolls, lay a wrapper on a clean surface. Place about 1 tablespoon of the egg and sausage mixture in the center of the wrapper, leaving a 1-inch border around the edges.
- Step 7: Top the egg mixture with about 1 tablespoon of the cheese mixture.
- Step 8: Brush the edges of the wrapper with a small amount of water, then fold the bottom half of the wrapper up over the filling, followed by the sides and finally the top half to form a tight cylinder. Repeat with the remaining wrappers and filling.
- Step 9: Serve the spring rolls hot with your favorite dipping sauce.
