Crispy spring rolls filled with scrambled eggs, sausage, and shredded cheese, perfect for a breakfast twist
Ingredients
- 0.5 cup bell peppers
- 2 cloves garlic
- 0.5 cup cheddar cheese
- Salt and pepper
- 1 package spring roll wrappers
- 4 large eggs
- 0.5 cup onions
- 1 tablespoon olive oil
- 1 pound sweet sausage
Instructions
- Step 1: In a large skillet, cook the sausage over medium-high heat, breaking it up with a spoon as it cooks, until no longer pink, about 5-7 minutes.
- Step 2: In a large bowl, whisk together the eggs and a pinch of salt. Add the diced bell peppers, onions, and garlic. Stir to combine.
- Step 3: Add the cooked sausage to the egg mixture and stir to combine.
- Step 4: In a small bowl, mix together the shredded cheese and a pinch of salt.
- Step 5: Lay a spring roll wrapper on a flat surface. Place about 1/4 cup of the egg mixture in the center of the wrapper. Top with about 1 tablespoon of the cheese mixture.
- Step 6: Brush the edges of the wrapper with a little water. Fold the bottom half of the wrapper up over the filling, then fold in the sides and roll up the wrapper to form a tight cylinder. Repeat with the remaining wrappers and filling.
- Step 7: Heat the olive oil in a large skillet over medium-high heat. When the oil is hot, add a few of the spring rolls to the skillet (do not overcrowd). Cook until golden brown and crispy, about 2-3 minutes on each side.
- Step 8: Serve the spring rolls hot with your favorite dipping sauce.
