Ingredients

  • 4 large bell peppers
  • 1 cup cheddar cheese
  • 6 large eggs
  • 2 cloves garlic
  • 1 tablespoon olive oil
  • 0.5 cup mozzarella cheese
  • 1 medium onion
  • 1 pound sweet Italian sausage
  • Salt and pepper

Instructions

  1. Step 1: Preheat oven to 375°F (190°C).
  2. Step 2: Cut off the tops of the peppers and remove seeds and membranes. Place them in a baking dish.
  3. Step 3: In a large skillet, cook sausage over medium-high heat, breaking it up with a spoon, until no longer pink, about 5-7 minutes.
  4. Step 4: Add the chopped onion and cook until translucent, about 3-4 minutes.
  5. Step 5: Add the garlic and cook for 1 minute.
  6. Step 6: In a large bowl, whisk together the eggs and a pinch of salt. Add the cooked sausage mixture, cheddar cheese, and mozzarella cheese. Stir to combine.
  7. Step 7: Stuff each pepper with the egg mixture and top with additional cheese if desired.
  8. Step 8: Drizzle the tops with olive oil and season with salt and pepper.
  9. Step 9: Cover the baking dish with aluminum foil and bake for 25 minutes.
  10. Step 10: Remove the foil and continue baking for an additional 10-15 minutes, until the peppers are tender and the filling is set.
