Description

Ingredients
- 4 large bell peppers
- 1 cup cheddar cheese
- 6 large eggs
- 2 cloves garlic
- 1 tablespoon olive oil
- 0.5 cup mozzarella cheese
- 1 medium onion
- 1 pound sweet Italian sausage
- Salt and pepper
Instructions
- Step 1: Preheat oven to 375°F (190°C).
- Step 2: Cut off the tops of the peppers and remove seeds and membranes. Place them in a baking dish.
- Step 3: In a large skillet, cook sausage over medium-high heat, breaking it up with a spoon, until no longer pink, about 5-7 minutes.
- Step 4: Add the chopped onion and cook until translucent, about 3-4 minutes.
- Step 5: Add the garlic and cook for 1 minute.
- Step 6: In a large bowl, whisk together the eggs and a pinch of salt. Add the cooked sausage mixture, cheddar cheese, and mozzarella cheese. Stir to combine.
- Step 7: Stuff each pepper with the egg mixture and top with additional cheese if desired.
- Step 8: Drizzle the tops with olive oil and season with salt and pepper.
- Step 9: Cover the baking dish with aluminum foil and bake for 25 minutes.
- Step 10: Remove the foil and continue baking for an additional 10-15 minutes, until the peppers are tender and the filling is set.
