Ingredients

- 4 large eggs
- 1 avocado
- 0.5 cup rice vinegar
- 0.5 cup granulated sugar
- 6 slices bacon
- 4 sheets nori seaweed
- 0.25 teaspoon salt
- 1 cup Japanese short-grain rice
- 0.25 cup scallions
Instructions
- Step 1: Prepare the sushi rice according to the package instructions using the water, sugar, rice vinegar, and salt.
- Step 2: Allow the rice to cool to room temperature.
- Step 3: Scramble the eggs in a bowl and set aside.
- Step 4: Cook the bacon slices in a pan until crispy, then chop into small pieces.
- Step 5: Cut the avocado into thin slices.
- Step 6: Assemble the sushi rolls by laying a sheet of nori seaweed flat, spreading a thin layer of sushi rice onto it, and leaving a 1-inch border at the top.
- Step 7: Add a few slices of scrambled egg, crispy bacon, and avocado in the middle of the rice.
- Step 8: Roll the sushi using a bamboo sushi mat, applying gentle pressure to form a compact roll.
