Ingredients
- 1 can (4 oz) diced green chilies
- 0.5 pound Mexican chorizo
- 2 cloves garlic
- 1 medium onion
- 0.5 cup cilantro
- 1 cup Monterey Jack cheese
- 6 large eggs
- Salt and pepper
- 8 tortillas corn
- 1 lime
Instructions
- Step 1: In a large skillet, cook the chorizo over medium-high heat, breaking it up with a spoon, until browned, about 5 minutes.
- Step 2: Add the diced onion and cook until translucent, about 3-4 minutes.
- Step 3: Add the minced garlic and cook for 1 minute, until fragrant.
