Description

Ingredients
- 1 small bell pepper
- 0.5 cup cheddar cheese
- 1 small onion
- 1 tablespoon olive oil
- Salt and pepper
- 0.5 cup black beans
- 2 large flour tortillas
- 4 slices bacon
- 2 eggs
Instructions
- Step 1: Cook the bacon slices in a pan over medium heat until crispy. Remove from heat and set aside.
- Step 2: In the same pan, add the diced onion and bell pepper and cook until tender.
- Step 3: Add the cooked black beans to the pan and stir to combine.
- Step 4: In a separate bowl, scramble the eggs and season with salt and pepper.
- Step 5: Add the scrambled eggs to the pan with the onion and bell pepper mixture and stir to combine.
- Step 6: Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
- Step 7: Assemble the wraps by spooning the egg mixture onto the tortilla, followed by a few slices of bacon and a sprinkle of cheddar cheese.
- Step 8: Fold the bottom half of the tortilla up over the filling, then fold in the sides and roll the wrap up tightly.
