Creamy broccoli cheddar soup served in a crispy bread bowl
Ingredients
- 2 cups chicken broth
- 2 tablespoons butter
- 3 cloves garlic
- 0.25 teaspoon black pepper
- 1 medium onion
- 1 cup milk
- 4 cups broccoli
- 0.5 teaspoon salt
- 1 cup cheddar cheese
- 1 teaspoon thyme
- 4 bread loaves
Instructions
- Step 1: Preheat oven to 375°F (190°C).
- Step 2: Slice the top off each bread loaf and hollow out the inside to create a bowl.
- Step 3: Place the bread bowls on a baking sheet and bake for 10-12 minutes, or until crispy.
- Step 4: In a large pot, melt the butter over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- Step 5: Add the minced garlic and cook for an additional minute.
- Step 6: Add the broccoli florets, chicken broth, milk, cheddar cheese, thyme, salt, and pepper to the pot. Stir until the cheese is melted and the soup is heated through.
- Step 7: Use an immersion blender to puree the soup until smooth.
- Step 8: Ladle the soup into the bread bowls and serve immediately.
