Ingredients

- Lime
- 0.25 cup cilantro
- 1 packet taco seasoning
- 1 can black beans
- 1 small onion
- 1 cup white rice
- 2 tablespoons lime juice
- 1 pound ground beef
Instructions
- Step 1: Cook the rice according to package instructions using 2 cups of water.
- Step 2: In a medium bowl, mix together chopped cilantro, lime juice, and olive oil.
- Step 3: Add the cilantro-lime mixture to the cooked rice and stir to combine.
- Step 4: In a large skillet, cook the diced onion over medium-high heat until translucent.
- Step 5: Add the ground beef to the skillet and cook until browned, breaking it up into small pieces as it cooks.
