Ingredients
- 4 6 oz lobster tails
- 0.5 cup unsalted butter
- 0.25 cup fish stock
- 2 tbsp parsley
- 2 cloves garlic
- Salt and pepper
- 0.25 cup white wine
- 2 lemons
Instructions
- Step 1: Bring a large pot of salted water to a boil, then reduce heat to a simmer
- Step 2: Prepare an ice bath and set aside
- Step 3: Melt 2 tbsp butter in a saucepan over medium heat, then add garlic and cook for 1 minute
- Step 4: Add white wine and fish stock to the saucepan, bringing to a simmer
- Step 5: Reduce heat to low and whisk in remaining butter until melted and smooth
- Step 6: Stir in lemon juice, parsley, salt, and pepper
- Step 7: Poach lobster tails in simmering water for 8-10 minutes, then immediately transfer to the ice bath to stop cooking
- Step 8: Serve lobster tails with butter sauce spooned over the top
