Ingredients

  • 4 6 oz lobster tails
  • 0.5 cup unsalted butter
  • 0.25 cup fish stock
  • 2 tbsp parsley
  • 2 cloves garlic
  • Salt and pepper
  • 0.25 cup white wine
  • 2 lemons

Instructions

  1. Step 1: Bring a large pot of salted water to a boil, then reduce heat to a simmer
  2. Step 2: Prepare an ice bath and set aside
  3. Step 3: Melt 2 tbsp butter in a saucepan over medium heat, then add garlic and cook for 1 minute
  4. Step 4: Add white wine and fish stock to the saucepan, bringing to a simmer
  5. Step 5: Reduce heat to low and whisk in remaining butter until melted and smooth
