Ingredients

  • 0.25 cup fish stock

  • 1 tsp paprika
  • 2 cloves garlic
  • 4 6 oz Maine lobster tails
  • 0.25 cup dry white wine
  • parsley
  • 2 lemons

Instructions

  1. Step 1: Fill a large saucepan with 2-3 inches of water and bring to a boil
  2. Step 2: Reduce heat to a simmer and add white wine, fish stock, lemon juice, garlic, and paprika
  3. Step 3: Add the lobster tails to the poaching liquid, cover, and cook for 8-10 minutes or until opaque and flaky
  4. Step 4: While the lobster cooks, melt the butter in a small saucepan over medium heat
  5. Step 5: Remove the lobster from the poaching liquid and place on a plate
  6. Step 6: Strain the poaching liquid into the melted butter, whisking until emulsified
