Description
Indulge in the rich flavors of poached Maine lobster tail, smothered in a decadent beurre blanc sauce
Ingredients
- 0.25 cup fish stock
- Salt and pepper
- 0.5 cup butter
- 1 tsp paprika
- 2 cloves garlic
- 4 6 oz Maine lobster tails
- 0.25 cup dry white wine
- parsley
- 2 lemons
Instructions
- Step 1: Fill a large saucepan with 2-3 inches of water and bring to a boil
- Step 2: Reduce heat to a simmer and add white wine, fish stock, lemon juice, garlic, and paprika
- Step 3: Add the lobster tails to the poaching liquid, cover, and cook for 8-10 minutes or until opaque and flaky
- Step 4: While the lobster cooks, melt the butter in a small saucepan over medium heat
- Step 5: Remove the lobster from the poaching liquid and place on a plate
- Step 6: Strain the poaching liquid into the melted butter, whisking until emulsified
- Step 7: Season the beurre blanc sauce with salt and pepper to taste
- Step 8: Serve the lobster tail with the beurre blanc sauce spooned over the top, garnished with chopped parsley
