Description

Spicy one-pot dish with chicken, rice, and Cajun flavors

Ingredients

  • 3 cloves garlic
  • 0.5 teaspoon salt
  • 1 teaspoon thyme
  • 0.25 teaspoon cumin
  • 1 large onion
  • 0.5 teaspoon cayenne pepper
  • 2 tablespoons vegetable oil
  • 2 cups chicken broth
  • 0.25 teaspoon black pepper
  • 0.5 pounds chicken breast or thighs
  • 3 stalks celery
  • 1 cup white rice
  • 0.5 teaspoon paprika

Instructions

  1. Step 1: Heat oil in a large cast-iron pot or Dutch oven over medium-high heat.
  2. Step 2: Add chicken to pot and cook until browned, about 5-7 minutes. Remove chicken from pot and set aside.
  3. Step 3: Add onion, celery, and garlic to pot and cook until vegetables are tender, about 5 minutes.
  4. Step 4: Add rice, chicken broth, thyme, paprika, cayenne pepper, salt, black pepper, and cumin to pot. Stir to combine.
  5. Step 5: Add browned chicken back to pot and stir to combine with rice mixture.
  6. Step 6: Bring mixture to a boil, then reduce heat to low, cover, and simmer for 25-30 minutes or until rice is tender and liquid has been absorbed.
