Description
Spicy one-pot dish with chicken, rice, and Cajun flavors
Ingredients
- 3 cloves garlic
- 0.5 teaspoon salt
- 1 teaspoon thyme
- 0.25 teaspoon cumin
- 1 large onion
- 0.5 teaspoon cayenne pepper
- 2 tablespoons vegetable oil
- 2 cups chicken broth
- 0.25 teaspoon black pepper
- 0.5 pounds chicken breast or thighs
- 3 stalks celery
- 1 cup white rice
- 0.5 teaspoon paprika
Instructions
- Step 1: Heat oil in a large cast-iron pot or Dutch oven over medium-high heat.
- Step 2: Add chicken to pot and cook until browned, about 5-7 minutes. Remove chicken from pot and set aside.
- Step 3: Add onion, celery, and garlic to pot and cook until vegetables are tender, about 5 minutes.
- Step 4: Add rice, chicken broth, thyme, paprika, cayenne pepper, salt, black pepper, and cumin to pot. Stir to combine.
- Step 5: Add browned chicken back to pot and stir to combine with rice mixture.
- Step 6: Bring mixture to a boil, then reduce heat to low, cover, and simmer for 25-30 minutes or until rice is tender and liquid has been absorbed.
