Ingredients
- Salt and pepper
- Sesame seeds
- 0.25 cup carrots
- 1 tablespoon sesame oil
- 1 teaspoon ginger
- 0.25 cup water
- 0.25 cup cucumber
- 0.25 cup avocado
- 1 cup ahi tuna
- 0.5 cup short-grain white rice
- 2 tablespoons soy sauce
- 0.25 teaspoon red pepper flakes
- 0.25 cup pickled ginger
- 1 tablespoon sriracha sauce
- 2 tablespoons mayonnaise
Instructions
- Step 1: Prepare the sushi rice according to package instructions using 1/2 cup of water.
- Step 2: In a medium bowl, whisk together soy sauce, sesame oil, grated ginger, and red pepper flakes.
- Step 3: Add the ahi tuna to the bowl and toss to coat with the marinade. Refrigerate for at least 30 minutes.
- Step 4: Cut the cucumber, carrots, and avocado into small pieces.
- Step 5: In a small bowl, mix together mayonnaise and sriracha sauce.
- Step 6: To assemble the bowls, place a scoop of sushi rice on the bottom, followed by a piece of tuna, some cucumber, carrots, and avocado.
- Step 7: Drizzle the spicy mayo over the top and garnish with pickled ginger, sesame seeds, and chopped scallions.
