Cantonese Fried Rice

Description

A classic Chinese dish made with stir-fried rice, vegetables, and your choice of protein

Ingredients

  • 1 tablespoon vegetable oil
  • Salt and pepper
  • 2 green onions
  • 1 cup chicken
  • 2 eggs
  • 2 cups rice
  • 1 cup mixed vegetables
  • 1 small onion
  • 1 teaspoon oyster sauce
  • 2 cloves garlic
  • 2 teaspoons soy sauce

Instructions

  1. Step 1: Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Step 2: Add the diced onion and minced garlic and stir-fry until they are translucent.
  3. Step 3: Add the mixed vegetables and cooked chicken, and stir-fry for 2-3 minutes.
  4. Step 4: Push the vegetables and chicken to one side of the pan.
  5. Step 5: Add a little more oil if necessary, then pour the beaten eggs into the other side of the pan.
  6. Step 6: Scramble the eggs until they are cooked through, then mix them with the vegetables and chicken.
  7. Step 7: Add the cooked rice to the pan, breaking up any clumps with a spatula.
  8. Step 8: Stir-fry the rice with the vegetables and eggs for about 5 minutes, or until everything is well combined and heated through.
  9. Step 9: Add the soy sauce and oyster sauce (if using), and stir-fry for another minute.
  10. Step 10: Taste and adjust the seasoning as needed.
  11. Step 11: Transfer the fried rice to a serving platter, garnish with chopped green onions, and serve immediately.
