Caprese Sandwich with Pesto Mayo

Description

A twist on the classic Italian Caprese salad, layered in a sandwich with pesto mayo

Ingredients

  • 8 oz Mozzarella cheese
  • Salt and Pepper
  • 1 large Tomato
  • 0.5 cup Pesto Mayo
  • 0.25 cup Basil
  • 4 Ciabatta rolls

Instructions

  1. Step 1: Preheat a panini press or grill to medium-high heat.
  2. Step 2: Slice the Ciabatta rolls in half and toast until lightly browned.
  3. Step 3: Spread 2 tbsp of Pesto Mayo on the bottom half of each roll.
  4. Step 4: Layer 2 slices of Mozzarella cheese, 2 slices of Tomato, and a few leaves of Basil on top of the Pesto Mayo.
  5. Step 5: Season with Salt and Pepper to taste.
  6. Step 6: Top with the top half of the Ciabatta roll.
  7. Step 7: Grill or press the sandwich for 3-4 minutes, or until the cheese is melted and the bread is crispy.
