Description

Ingredients
- 0.5 cup red onion
- 0.5 teaspoon cumin
- Salt and pepper
- 2 cloves garlic
- Guacamole
- 1.5 lbs flank steak
- 1 cup Mexican rice
- 4 large flour tortillas
- 0.25 cup cilantro
- 0.25 teaspoon paprika
- 2 tablespoons lime juice
- 8 ounces Monterey Jack cheese
- 1 cup black beans
- 1 teaspoon oregano
- 1 cup tomatoes
- Salsa
Instructions
- Step 1: Preheat grill to medium-high heat
- Step 2: In a large resealable plastic bag, combine lime juice, garlic, oregano, cumin, paprika, salt, and pepper
- Step 3: Add the steak to the marinade, turning to coat
- Step 4: Grill the steak for 5-7 minutes per side, or until it reaches desired doneness
- Step 5: Transfer the steak to a cutting board and let it rest for 5 minutes
- Step 6: Slice the steak against the grain into thin strips
- Step 7: In a large bowl, combine the cooked rice, black beans, diced tomatoes, and chopped cilantro
- Step 8: In a large skillet, warm the tortillas over medium heat for 30 seconds on each side
- Step 9: Assemble the burritos by spreading a quarter of the rice mixture onto the center of each tortilla, followed by a quarter of the sliced steak, and a quarter of the shredded cheese
- Step 10: Fold the bottom edge of the tortilla up over the filling, then fold in the sides and roll the burrito up tightly
- Step 11: Serve the burritos with guacamole and salsa
