Ingredients

  • 0.5 cup red onion
  • 0.5 teaspoon cumin
  • Salt and pepper
  • 2 cloves garlic
  • Guacamole
  • 1.5 lbs flank steak
  • 1 cup Mexican rice
  • 4 large flour tortillas
  • 0.25 cup cilantro
  • 0.25 teaspoon paprika
  • 2 tablespoons lime juice
  • 8 ounces Monterey Jack cheese
  • 1 cup black beans
  • 1 teaspoon oregano
  • 1 cup tomatoes
  • Salsa

Instructions

  1. Step 1: Preheat grill to medium-high heat
  2. Step 2: In a large resealable plastic bag, combine lime juice, garlic, oregano, cumin, paprika, salt, and pepper
  3. Step 3: Add the steak to the marinade, turning to coat
  4. Step 4: Grill the steak for 5-7 minutes per side, or until it reaches desired doneness
  5. Step 5: Transfer the steak to a cutting board and let it rest for 5 minutes
  6. Step 6: Slice the steak against the grain into thin strips
  7. Step 7: In a large bowl, combine the cooked rice, black beans, diced tomatoes, and chopped cilantro
  8. Step 8: In a large skillet, warm the tortillas over medium heat for 30 seconds on each side
  9. Step 9: Assemble the burritos by spreading a quarter of the rice mixture onto the center of each tortilla, followed by a quarter of the sliced steak, and a quarter of the shredded cheese
  10. Step 10: Fold the bottom edge of the tortilla up over the filling, then fold in the sides and roll the burrito up tightly
  11. Step 11: Serve the burritos with guacamole and salsa
