Description
A classic Mexican dish featuring slow-cooked pork, beans, and cheese wrapped in a large flour tortilla
Ingredients
- 1 cup Monterey Jack cheese
- 1 cup scallions
- 2 pounds pork shoulder
- 1 cup black beans
- 0.25 cup orange juice
- 1 cup cilantro
- 0.25 teaspoon black pepper
- 4 large flour tortillas
- 0.25 cup lime juice
- Salsa and sour cream
- 0.25 cup lard
- 1 teaspoon dried oregano
- 2 cloves garlic
- 0.5 teaspoon salt
Instructions
- Step 1: In a large Dutch oven, heat the lard or oil over medium heat
- Step 2: Add the pork and cook until browned on all sides, about 5 minutes
- Step 3: Add the orange and lime juice, garlic, oregano, salt, and pepper
- Step 4: Cover the pot and transfer to the oven
- Step 5: Braise the pork for 2 1/2 hours, or until tender and easily shredded
- Step 6: Using two forks, shred the pork into bite-sized pieces
- Step 7: Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds
- Step 8: Assemble the burritos by spooning the pork, beans, cheese, cilantro, and scallions onto a tortilla and rolling up
- Step 9: Serve with salsa and sour cream
