Description
Stir-fried chicken, cashews, and vegetables in a savory sauce
Ingredients
- 1 lb chicken breasts
- 2 tbsp soy sauce
- 1 tsp ginger
- 1 onion
- Salt and pepper
- 2 cloves garlic
- 1 cup mixed bell peppers
- 1 tbsp oyster sauce
- 1 tsp sugar
- 2 tbsp vegetable oil
- 0.5 cup cashews
Instructions
- Step 1: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Step 2: Add the chicken and cook until browned and cooked through, about 5-6 minutes. Remove from the skillet and set aside.
- Step 3: In the same skillet, add the remaining 1 tablespoon of vegetable oil.
- Step 4: Add the chopped onion and cook until translucent, about 3-4 minutes.
- Step 5: Add the minced garlic and cook for 1 minute.
- Step 6: Add the mixed bell peppers and cook until tender, about 3-4 minutes.
- Step 7: Add the cashews and cook for 1 minute.
- Step 8: In a small bowl, whisk together the soy sauce, oyster sauce (if using), grated ginger, and sugar.
- Step 9: Pour the sauce into the skillet and stir to combine.
- Step 10: Return the cooked chicken to the skillet and stir to coat with the sauce.
- Step 11: Season with salt and pepper to taste.
