Description

Stir-fried chicken, cashews, and vegetables in a savory sauce

Ingredients

  • 1 lb chicken breasts
  • 2 tbsp soy sauce
  • 1 tsp ginger
  • 1 onion
  • Salt and pepper
  • 2 cloves garlic
  • 1 cup mixed bell peppers
  • 1 tbsp oyster sauce
  • 1 tsp sugar
  • 2 tbsp vegetable oil
  • 0.5 cup cashews

Instructions

  1. Step 1: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  2. Step 2: Add the chicken and cook until browned and cooked through, about 5-6 minutes. Remove from the skillet and set aside.
  3. Step 3: In the same skillet, add the remaining 1 tablespoon of vegetable oil.
  4. Step 4: Add the chopped onion and cook until translucent, about 3-4 minutes.
  5. Step 5: Add the minced garlic and cook for 1 minute.
  6. Step 6: Add the mixed bell peppers and cook until tender, about 3-4 minutes.
  7. Step 7: Add the cashews and cook for 1 minute.
  8. Step 8: In a small bowl, whisk together the soy sauce, oyster sauce (if using), grated ginger, and sugar.
  9. Step 9: Pour the sauce into the skillet and stir to combine.
  10. Step 10: Return the cooked chicken to the skillet and stir to coat with the sauce.
  11. Step 11: Season with salt and pepper to taste.
