Cashew Chicken stir-fry

Description
A savory and crunchy stir-fry made with marinated chicken, cashews, and mixed vegetables
Ingredients
- 2 tablespoons vegetable oil
- 1 pound chicken breasts
- 1 tablespoon oyster sauce
- 2 tablespoons soy sauce
- 2 cloves garlic
- 2 cups broccoli florets
- 1 cup mixed bell peppers
- 1 tablespoon ginger
- Salt and pepper
- 0.5 cup cashews
- 1 teaspoon sesame oil
Instructions
- Step 1: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat
- Step 2: Add the chicken and cook until browned and cooked through, about 5-6 minutes
- Step 3: Remove the chicken from the skillet and set aside
- Step 4: In the same skillet, add the remaining 1 tablespoon of vegetable oil
- Step 5: Add the garlic and ginger and stir-fry for 1 minute
- Step 6: Add the mixed bell peppers and broccoli and stir-fry for 2-3 minutes
- Step 7: Add the cooked chicken back into the skillet and stir in the soy sauce and sesame oil
- Step 8: Cook for an additional 1-2 minutes, until the sauce has thickened
- Step 9: Stir in the cashews and cook for 1 minute
- Step 10: Season with salt and pepper to taste
