Cashew Chicken stir-fry

Description

A savory and crunchy stir-fry made with marinated chicken, cashews, and mixed vegetables

Ingredients

  • 2 tablespoons vegetable oil
  • 1 pound chicken breasts
  • 1 tablespoon oyster sauce
  • 2 tablespoons soy sauce
  • 2 cloves garlic
  • 2 cups broccoli florets
  • 1 cup mixed bell peppers
  • 1 tablespoon ginger
  • Salt and pepper
  • 0.5 cup cashews
  • 1 teaspoon sesame oil

Instructions

  1. Step 1: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat
  2. Step 2: Add the chicken and cook until browned and cooked through, about 5-6 minutes
  3. Step 3: Remove the chicken from the skillet and set aside
  4. Step 4: In the same skillet, add the remaining 1 tablespoon of vegetable oil
  5. Step 5: Add the garlic and ginger and stir-fry for 1 minute
  6. Step 6: Add the mixed bell peppers and broccoli and stir-fry for 2-3 minutes
  7. Step 7: Add the cooked chicken back into the skillet and stir in the soy sauce and sesame oil
  8. Step 8: Cook for an additional 1-2 minutes, until the sauce has thickened
  9. Step 9: Stir in the cashews and cook for 1 minute
  10. Step 10: Season with salt and pepper to taste
