Ingredients

  • 3 cloves garlic
  • 1 cup onion
  • 1 can crushed tomatoes
  • 0.25 cup basil leaves
  • Salt and pepper
  • 2 tablespoons olive oil
  • 2 cups tomatoes
  • 1 cup Parmesan cheese
  • 1 package cheese tortellini
  • 1 cup heavy cream

Instructions

  1. Step 1: Bring a large pot of salted water to a boil and cook tortellini according to package instructions. Reserve 1 cup of pasta water before draining.
  2. Step 2: In a large skillet, heat olive oil over medium heat. Add chopped onion and cook until translucent (3-4 minutes).
  3. Step 3: Add minced garlic and cook for 1 minute, until fragrant.
  4. Step 4: Add diced fresh tomatoes and cook for 3-4 minutes, until they start to release their juices.
  5. Step 5: Add crushed tomatoes, salt, and pepper. Stir to combine.
  6. Step 6: Reduce heat to low and simmer the sauce for 10-12 minutes, stirring occasionally.
  7. Step 7: Stir in heavy cream and cook for an additional 2-3 minutes, until the sauce has slightly thickened.
  8. Step 8: Add grated Parmesan cheese and stir until melted and smooth.
  9. Step 9: Add cooked tortellini to the skillet, tossing to combine with the tomato cream sauce. If the sauce seems too thick, add some reserved pasta water.
  10. Step 10: Season with salt and pepper to taste, then garnish with chopped fresh basil leaves.
