Description
A creamy, cheesy twist on traditional refried beans
Ingredients
- 1 tablespoon olive oil
- 2 cloves garlic
- 1 onion
- 1 cup pinto beans
- 1 jalapeño pepper
- Salt and pepper
- 0.5 cup cheddar cheese
- 1 teaspoon paprika
- 0.25 cup Monterey Jack cheese
- 1 teaspoon cumin
- 1 cup chicken broth
Instructions
- Step 1: In a large pot, heat the olive oil over medium heat.
- Step 2: Add the onion and cook until softened, about 5 minutes.
- Step 3: Add the garlic and jalapeño and cook for an additional 1 minute.
- Step 4: Add the soaked and drained pinto beans, chicken broth, cumin, and paprika.
- Step 5: Bring to a boil, then reduce heat to low and simmer for 1 hour, or until the beans are tender.
- Step 6: Mash the beans with a potato masher or a fork until they are mostly smooth.
- Step 7: Stir in the cheddar and Monterey Jack cheese until melted and well combined.
- Step 8: Season with salt and pepper to taste.
- Step 9: Serve hot.
