A creamy, cheesy twist on traditional refried beans

Ingredients

  • 1 tablespoon olive oil
  • 2 cloves garlic
  • 1 onion
  • 1 cup pinto beans
  • 1 jalapeño pepper
  • Salt and pepper
  • 0.5 cup cheddar cheese
  • 1 teaspoon paprika
  • 0.25 cup Monterey Jack cheese
  • 1 teaspoon cumin
  • 1 cup chicken broth

Instructions

  1. Step 1: In a large pot, heat the olive oil over medium heat.
  2. Step 2: Add the onion and cook until softened, about 5 minutes.
  3. Step 3: Add the garlic and jalapeño and cook for an additional 1 minute.
  4. Step 4: Add the soaked and drained pinto beans, chicken broth, cumin, and paprika.
  5. Step 5: Bring to a boil, then reduce heat to low and simmer for 1 hour, or until the beans are tender.
  6. Step 6: Mash the beans with a potato masher or a fork until they are mostly smooth.
  7. Step 7: Stir in the cheddar and Monterey Jack cheese until melted and well combined.
  8. Step 8: Season with salt and pepper to taste.
  9. Step 9: Serve hot.
