Ingredients

  • 0.25 teaspoon black pepper
  • 2 cloves garlic
  • 4 cups water
  • 1 teaspoon paprika
  • 0.5 teaspoon cayenne pepper
  • 1 pound shrimp
  • 1 cup stone-ground grits
  • 2 tablespoons butter
  • 0.5 cup Parmesan cheese
  • 0.5 teaspoon salt
  • 0.25 cup scallions
  • 1 cup cheddar cheese

Instructions

  1. Step 1: Bring the water to a boil in a medium saucepan. Gradually whisk in the grits and reduce the heat to low. Cook, covered, for 20-25 minutes or until the grits are creamy.
  2. Step 2: In a large skillet, melt the butter over medium-high heat. Add the shrimp and cook, stirring occasionally, for 2-3 minutes per side or until pink and cooked through.
  3. Step 3: Remove the shrimp from the skillet and set aside. Reduce the heat to medium and add the paprika, cayenne pepper, salt, and black pepper. Cook for 1 minute.
  4. Step 4: Stir in the garlic and cook for 1 minute. Sprinkle the cheddar and Parmesan cheese into the skillet and stir until melted and smooth.
  5. Step 5: Stir the cheese sauce into the cooked grits. Add the cooked shrimp back into the skillet and stir to combine.
  6. Step 6: Serve the shrimp and grits hot, garnished with chopped scallions.
