Description
A flavorful and crispy Mexican dish filled with shredded chicken and melted cheese.
Ingredients
- 1 medium onion
- 1 jalapeno pepper
- 1 pound chicken breasts
- Salt and pepper
- 1 cup cheddar cheese
- 1 medium bell pepper
- 2 cloves garlic
- 8 large tortillas
- 2 cups Monterey Jack cheese
- 0.5 teaspoon cayenne pepper
- 1 teaspoon cumin
- 1 teaspoon paprika
- 2 tablespoons olive oil
Instructions
- Step 1: Heat 1 tablespoon olive oil in a large skillet over medium-high heat.
- Step 2: Add chicken to the skillet and cook until browned and cooked through, about 5-6 minutes.
- Step 3: Add onion, garlic, bell pepper, and jalapeno to the skillet and cook until the vegetables are tender, about 5 minutes.
- Step 4: In a large bowl, combine cooked chicken and vegetable mixture, cumin, paprika, cayenne pepper, salt, and pepper.
- Step 5: In a separate pan or griddle, heat the remaining 1 tablespoon olive oil over medium heat.
- Step 6: Place a tortilla in the pan and sprinkle a quarter of the cheese mixture on half of the tortilla.
- Step 7: Add a quarter of the chicken and vegetable mixture on top of the cheese.
- Step 8: Fold the tortilla in half to enclose the filling.
- Step 9: Cook for 2-3 minutes or until the tortilla is crispy and the cheese is melted.
- Step 10: Flip the quesadilla and cook for an additional 2-3 minutes or until the other side is also crispy and the cheese is melted.
- Step 11: Repeat with the remaining tortillas and filling.
