Ingredients

  • 1 medium onion
  • 1 jalapeno pepper
  • 1 pound chicken breasts
  • Salt and pepper
  • 1 cup cheddar cheese
  • 1 medium bell pepper
  • 2 cloves garlic
  • 8 large tortillas
  • 2 cups Monterey Jack cheese
  • 0.5 teaspoon cayenne pepper
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 2 tablespoons olive oil

Instructions

  1. Step 1: Heat 1 tablespoon olive oil in a large skillet over medium-high heat.
  2. Step 2: Add chicken to the skillet and cook until browned and cooked through, about 5-6 minutes.
  3. Step 3: Add onion, garlic, bell pepper, and jalapeno to the skillet and cook until the vegetables are tender, about 5 minutes.
  4. Step 4: In a large bowl, combine cooked chicken and vegetable mixture, cumin, paprika, cayenne pepper, salt, and pepper.
  5. Step 5: In a separate pan or griddle, heat the remaining 1 tablespoon olive oil over medium heat.
  6. Step 6: Place a tortilla in the pan and sprinkle a quarter of the cheese mixture on half of the tortilla.
  7. Step 7: Add a quarter of the chicken and vegetable mixture on top of the cheese.
  8. Step 8: Fold the tortilla in half to enclose the filling.
  9. Step 9: Cook for 2-3 minutes or until the tortilla is crispy and the cheese is melted.
  10. Step 10: Flip the quesadilla and cook for an additional 2-3 minutes or until the other side is also crispy and the cheese is melted.
  11. Step 11: Repeat with the remaining tortillas and filling.
