Description
Comforting and hearty chicken soup with fluffy homemade dumplings
Ingredients
- 4 teaspoons baking powder
- 1 teaspoon thyme
- 0.5 teaspoon salt
- 2 carrots
- 2 cups all-purpose flour
- 1 large onion
- 2 stalks celery
- 0.5 teaspoon basil
- 0.25 cup shortening or butter
- 0.75 cup water
- 0.5 pounds chicken breast or thighs
- 3 cloves garlic
- 0.25 teaspoon black pepper
Instructions
- Step 1: In a large pot, sauté the onion, garlic, carrots, and celery in a little bit of oil until the vegetables are tender.
- Step 2: Add the chicken, chicken broth, thyme, basil, salt, and pepper to the pot. Bring to a boil, then reduce heat and simmer for 10-15 minutes or until the chicken is cooked through.
- Step 3: In a separate bowl, whisk together the flour, baking powder, and melted shortening or butter until the mixture resembles coarse crumbs.
- Step 4: Gradually add the warm water to the flour mixture, stirring with a fork until a shaggy dough forms.
- Step 5: Drop the dumpling dough by tablespoonfuls onto the surface of the simmering chicken and vegetables.
- Step 6: Cover the pot and cook for an additional 10-15 minutes or until the dumplings are cooked through and have puffed up slightly.
